Some dishes are born out of necessity — and end up becoming favourites. This Tomato Chutney Rice Pie is exactly that. Leftover rice, a spoon of tangy chutney, and a handful of everyday spices come together into something warm, layered and quietly luxurious.
Think of it as a savoury pie without the fuss of pastry. The base is cooked rice, the filling is tomato chutney with a few vegetables, and the top gets a light, crisp finish in the oven. Forgiving, adaptable, and very hard to get wrong.
Why This Recipe Works
- Uses leftover rice — no need to cook fresh rice just for this dish.
- One pan, one bake — most of the work happens in a single pan plus the oven.
- Adaptable — swap vegetables, adjust spice, add cheese on top if you like.
- Family friendly — mild enough for children, with chutney on the side for those who want more heat.
Ingredients
1 For the rice base
- 3 cups cooked rice (cooled, ideally a day old)
- 1 small onion, finely chopped
- 1 green chili, finely chopped (optional)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- A handful of fresh coriander, chopped
2 For the tomato chutney layer
- 4 medium ripe tomatoes, roughly chopped
- 1 small onion, roughly chopped
- 2 dried red chilies (or 1 teaspoon red chili flakes)
- 2 garlic cloves
- 1 teaspoon cumin seeds
- 1 teaspoon coriander seeds
- 1 tablespoon oil
- Salt to taste
- 1 teaspoon jaggery or sugar
3 For the topping (optional)
- 1/2 cup grated cheese (cheddar or mozzarella)
- 1 tablespoon breadcrumbs
- A few coriander leaves for garnish
Method
Step 1 — The Tomato Chutney
- Heat oil in a pan. Add cumin seeds and coriander seeds. Let them splutter.
- Add garlic, dried red chilies and onion. Sauté until the onion turns soft and slightly golden.
- Add chopped tomatoes and salt. Cook on medium heat until the tomatoes break down completely and the mixture thickens — about 8 to 10 minutes.
- Add jaggery or sugar and stir. Taste and adjust salt and tang.
- Let it cool slightly, then blend into a smooth or slightly coarse chutney. Set aside.
Chef's Note
A thicker chutney means a firmer pie. If yours looks watery, give it a few more minutes on the heat before blending.
Step 2 — The Rice Base
- Heat oil in a wide pan. Add cumin seeds and let them splutter.
- Add onion and green chili. Sauté until soft.
- Add turmeric, red chili powder, garam masala and salt. Stir for a few seconds.
- Add the cooked rice and mix gently until the spices coat the rice evenly.
- Turn off the heat and stir in fresh coriander.
Step 3 — Layering
- Preheat the oven to 180°C (350°F).
- Grease a baking dish with a little oil or butter.
- Press the rice mixture evenly into the dish to form the base.
- Spread the tomato chutney in an even layer over the rice.
- If using cheese, sprinkle it on top along with breadcrumbs.
Step 4 — The Bake
- Bake for 20 to 25 minutes, until the top is golden and the edges look slightly crisp.
- Let it rest for 5 minutes before slicing. This helps it hold shape.
- Garnish with fresh coriander and serve warm.
Tips for Getting It Right
- Use cold, day-old rice. Freshly cooked rice is too moist and the base will not hold together well.
- Do not oversalt the chutney. The rice also has salt, and both layers combine when you eat.
- Thick chutney is better. If it is too watery, the rice base will turn soggy.
- Want more protein? Add a layer of crumbled paneer or cooked chickpeas between the rice and chutney.
- No oven? Cook it covered on the stovetop in a heavy pan on low heat for 12 to 15 minutes.
How to Serve It
This rice pie works beautifully as a main dish for dinner with a simple salad or raita on the side. It also makes a good lunchbox option if you pack it in a firm container — the layers hold up when cool.
For those who like extra heat, keep a small bowl of Zikhi tomato chutney or red chili flakes on the table. A few slices of cucumber or onion on the side balance the tang beautifully.
Make It Your Own
- Swap tomatoes for roasted red peppers for a sweeter chutney.
- Add a layer of sautéed spinach between the rice and chutney.
- Top with crushed papad instead of breadcrumbs for a crunchy Indian twist.
- Use brown rice or millet for a slightly nuttier base.
A Note on Spices
The flavour of this dish depends heavily on the quality of your spices. Fresh cumin seeds, good turmeric and a warming garam masala make a visible difference. If you are restocking your kitchen, Zikhi sources spices directly from farmers — cumin seeds, turmeric, garam masala and other everyday essentials that suit recipes like this one.
